Greece was a beautiful country full of history, incredible architecture, colorful people and… great food! Here are a few of our favorites that we’re hoping to replicate in our home kitchen before too long.
Feta, most commonly seen as a crumbled topping, is often served in Greece as a full slab either on top of a Greek Salad (also fantastic), or as in this dish, seasoned and served as a flatbread topping. One of our favorite versions came from a small seaside cafe just off of Perissa Beach in Santorini. The dish, in essence consists of a slab of feta cheese placed over fresh Santorini Tomatoes (a variety of cherry tomatoes), slices of onion, and green peppers. The whole combination is placed on aluminum foil, drizzled with Greek olive oil and a combination of dried oregano, thyme, parsley and red pepper, wrapped and grilled to lightly gooey, flavorful perfection. The cooked feta is served with warm pita as an appetizer, although I could have easily gone for a second as the main event. Click to continue »
